Sauerkraut is a nutritious fermented sour cabbage made with three simple ingredients: cabbage, salt, and time. Sauerkraut undergoes a process called lacto-fermentation, by growing lactic acid bacteria (Lactobacillus) in a salt-tolerant and anaerobic (absence of oxygen) environment. This hardworking bacteria transform sugar into lactic acid, giving the end result unique umami sour characteristics.
Even though it gained its popularity in Germany, but its origin is from China, over 2000 years ago where they ferment cabbage using rice wine for tough winter times.
