Cheesy Kimchi Pancakes
Sour kimchi pairs perfectly with cheese in these crispy pancakes. Sweetcorn and spring onion give them extra texture and flavour. They would go down a treat at any brunch or simply as a snack.
- 1/2 cup flour
- 1/4 tbsb baking powder
- 13 g corn starch
- 1/2 tsp salt if plus more if you needed
- 1/2 cup water plus more if you needed
- spring onion

Using corn and coriander from our farm, this easy recipe proved a favorite with the team and the corn disappeared very quickly once out of the oven. We have been testing growing corn in monsoon and while it is not very healthy we have still been able to harvest and its been very sweet.
